The use of honey as a healing agent is nothing new. In most ancient cultures honey has been used for both nutritional and medical purposes. Honey was an ingredient in more than half of the medicinal compounds and cures developed by early Egyptian physicians. It has long been used in traditional Chinese Medicine and in Ayurveda (a natural healing system developed in India thousands of years ago). Pythagoras attributed his long life to eating honey regularly, and according to the bible even King Solomon said: “Eat honey my son, because it is good!” (Old Testament, Proverbs 24:13).

Honey is a supersaturated solution of sugar produced by honey bees (Apis mellifera). Bees gather nectar from flowers and take it back to their hive in their stomachs where they add an enzyme called glucose oxidase. Once back in the hive the bee regurgitates the liquid and it is placed into a wax cell (honeycomb) where excess water is evaporated to prevent fermentation. The honey cell is then ‘capped’, covered with a thin layer or wax to seal it – and ready for consumption.
